Veggie Curry

-Kale
-Tofu or tempeh
-Edamame
-Carrots
-Mushrooms
-Rice
-Curry sauce (I used yellow curry from Trader Joe's... just assume everything I get is from Trader Joe's because it is)
-Spices (turmeric, cumin, sea salt, red pepper flakes)
-Soy sauce
Cook some rice according to the package. Cook all the veggies and the tofu in a skillet with oil and the spices until they're ready (I add kale last because I just want to heat it up a little, not fully cook it). When the veggies are done add them to the rice and pour the curry sauce over it all. I like to do a little less curry and then add a little soy sauce too. Add flax seeds or sesame seeds on top if you want something crunchy.
