Cheezy Roma Quinoa Pasta

-Quinoa rotini pasta
-Knorrs parma rosa pasta packet**
-Vegan butter (I always use EarthBalance)
-Almond milk, unsweetened
-Spinach
Cook the quinoa pasta according to the directions (boil water and cook for about 7 minutes, again I used Trader Joe's brand). I add some cheeze (vegan mozzarella by Trader Joe's- but I also like GoVeggie) to the bowl before and after I add the cooked pasta so it can melt. Cook the pasta sauce according to the packet
*(Knorrs packets are not vegan and contain a small percentage of parmesan and whey, to make this recipe vegan use marinara sauce or you can make Roma sauce from scratch:
1 (14oz.) can of diced tomatoes
1 tsp. basil
1 tsp. oregano
2 tsp. of garlic powder
1 1/2 cup of nondairy milk
1/4 cup of vegan parmesan
Stir ingredients together on medium heat in a pan until it boils, then set to low and simmer for about 10 minutes stirring often)*
While the sauce is cooking I add about 2 handfuls of spinach ripped up, and then when it's done pour it over the pasta and the cheeze and stir. Obviously I like a LOT of sauce it kinda looks like soup... But add as much sauce as you like.
