-Rice
-Tempeh, or tofu
-Carrots
-Kale
-Pumpkin seeds (high protein!!)
-Mushrooms
-Avocado
-Flaxseeds
-Green Goddess dressing (or any dressing you like)
-Hummus
Cook the rice according to the box/bag. Cook the tempeh, mushrooms, and carrots on a skillet with a little bit of oil until those are cooked all the way. Take those off the skillet and cook the kale and pumpkin seeds with oil (or lemon juice) and a little bit of sea salt for just a few minutes. Put the rice in the bowl and mix it with some dressing, then add the cooked veggies on top. Scoop some hummus on top and add avocado, then top with the flax seeds and enjoy! Although yes, this is a masterpiece of vegan cuisine it took me less than 20 minutes :)
