Quesadillas

-Tortilla
-Vegan cheeze (Trader Joe's vegan mozzarella)
-Guacamole (see my guac recipe)
-Peppers
-Tempeh or tofu
-Kale
Cook the tempeh (or tofu) with lemon juice and red pepper flakes, add the peppers and cook until they are both done. Lay out the tortilla and cover half with cheeze, the peppers and tempeh, and kale then fold over and cook the quesadilla on a skillet. Enjoy with guac, salsa or anything else you'd put on a quesadilla!
